Italian Zucchini

 

Serves 15

 

4 eggs slightly beaten

3 cups thinly sliced zucchini

1 onion chopped fine

1 clove garlic minced

½ cup oleo (melted)

1 cup Bisquick

Salt and pepper to taste

 

Mix all ingredients and spread on a lightly greased cookie sheet (jelly roll pan). Sprinkle with ½ teaspoon seasoned salt and ½ cup grated Parmesan cheese. Bake 350 degrees for 20 minutes.
